Fruit intake is carried out in several stages, depending on the seasonality of the fruits. The earliest fruits are cherries, followed by apricots, plums, apples, pears to complete the process with the intake of quinces as the latest fruit.
The unloading of the fruits is carried out in the reception baths. We have two reception baths available. One for stone fruits and one for pome fruits. The stone fruit bath is the place where the stone is separated from the fruit itself, then through a grinder and a passer, the fruits take on a homogeneous mass or the so-called fruit pulp.
After this process, the fruit pulp is transported with a powerful pump to the fermentation vessels, which have a volume of 30 to 60 tons, and then the fermentation process itself can safely begin.
